Well, we’ve managed to make them even better, by using wholesome ingredients, adding pecans, and infusing them with CBD. Now you can enjoy a tasty sweet treat with all the benefits of your daily dose of CBD in one mouth watering edible. 

This recipe includes customisation options, like the type of sugar, variation and quantity of chocolate chips, and dose of CBD, so you can make your cookies exactly how you like them. What makes these cookies healthier than typical recipes?

Our CBD cookie recipe is by no means healthy in the way a superfood salad is healthy, but it does contain more wholesome ingredients than most other similar recipes and cookie products. For example, we opt for wholemeal flour over white, and maple or coconut sugar over white as well. As this recipe is vegan friendly, we also use vegan butter and milk alternatives from plant origins. The chocolate chips we recommend are dark and semi-sweet rather than packed with sugar, and the pecans add some extra nutrients. 

These swaps and additions help to reduce the unhealthy factors in chocolate chip cookies while still maintaining their delicious taste and texture. Also, the infusion of CBD means these cookies can help support your wellness and engage your endocannabinoid system, boosting their benefits in comparison to standard cookies.

 

What type of CBD does this recipe call for?

There are two ways to infuse this recipe with CBD, so you can choose the type that works best for you depending on the type of CBD you prefer. To infuse with water-soluble CBD, you’ll want to mix it into the milk before adding it to the recipe. To infuse with CBD oil, you’ll want to add it to the butter mixture as it is fat soluble. 

We would recommend using water-soluble CBD for this recipe because it may be able to withstand higher temperatures more effectively as it is designed for hot and cold beverages. However, you can also ensure the oven temperature accommodates the CBD oil, ensuring not to bake above 350 degrees Fahrenheit or 180 degrees Celsius (our recommended baking temperatures for this recipe). This is because temperatures above this point can cause some of the CBD to evaporate and therefore reduce its effectiveness. So, you can stick to the recommended temperature or set the oven slightly lower, the latter would just take a little longer to bake. 

 

Ingredients

Here are the key ingredients you’ll need for this recipe:

  • ½ cup maple sugar or coconut sugar 
  • ½ cup brown sugar
  • 1 cup wholemeal flour
  • 1 teaspoon baking powder
  • ½ cup plant-based butter
  • ½ tsp vanilla extract
  • ⅛ cup oat milk (or a plant-based milk of your choice)
  • ¼ - ½ cup of vegan dark semi-sweet chocolate chips or your favourite type of chocolate chips (the quantity purely depends on how much chocolate you want in your cookies)
  • ¼ - ½ cup of chopped pecans (the quantity purely depends on how nutty you want your cookies to be) - skip this ingredient if you have a nut allergy
  • Your desired dose of water-soluble CBD or CBD oil (keep in mind that this recipe makes a batch of approximately 10-12 cookies)

 

Instructions

  1. First, preheat your oven to 350 degrees Fahrenheit/180 degrees Celsius, or lower if desired.
  2. Next, you’ll need to decide which type of CBD you want to incorporate into your cookies. 
  3. If you choose water-soluble CBD, stir it well into the ⅛ cup of milk. If you choose CBD oil, mix it into the ½ cup of plant-based butter. There's no rule against incorporating both, just make sure to keep the overall dose per cookie in mind. 
  4. Combine your plant-based butter, plant-based milk, sugar, and vanilla extract in a mixing bowl until you achieve a creamy consistency.
  5. Unless they’re pre-chopped, chop your pecans into small pieces.
  6. Next, add your desired amount of chocolate chips and chopped pecans into the mixture along with your wholemeal flour and combine into a dough.
  7. Optional step: chill the dough for 25-35 minutes before baking. For rounder thicker cookies chill for longer, and for flatter cookies skip this step or chill for a shorter amount of time. 
  8. Form your dough into balls and line them up on a baking tray covered with parchment paper. 
  9. Put the tray in the oven and bake for 10-12 minutes (slightly longer if you set your oven to a lower temperature).
  10. Remove the cookies from the oven when the edges begin to look golden.
  11. Allow the cookies to cool for 10-20 minutes as this helps them reach the perfect texture.
  12. Enjoy your CBD-infused treat!
